I am not in Punjab. Or I would have gladly danced the Bhangra with the Sikh farmers in
their Rice (or is it the season for Wheat?) fields today on the auspicious occasion of
Baisakhi. This is their harvest festival. And also a day of great religious significance: the
tenth Guru of the Sikhs, the revered Guru Gobind Singh ji, founded the new and pure order of the Khalsa Panth on this day in 1699, teaching the faithful that no ritual or superstition is above the Almighty. I like the Sikhs. They are among the world’s friendliest people. Warm, large-hearted, kind, and fiercely loyal towards all those they consider as friends. I am fortunate. I have several Sikhs as close friends. Most of them are chefs or restaurateurs. Which is why I am thinking of having Butter Chicken for lunch today. It is Punjab’s signature dish. Lip-smacking delicious. One that the British quickly adapted and put on the menus of their Indian restaurants. Simply described as marinated and grilled chicken (Tandoori Chicken) cooked in an aromatic, smooth, and buttery rich, and creamy tomato gravy. The story goes that it was created in the 1930s by the Delhi restaurateur Kundan Lal Gujral (grandfather of my friend Monish Gujral of the Moti Mahal chain of restaurants) and then went around the world. The best Butter Chicken I have had in Mumbai is at (yes, other friends) Gogi Singh’s Pritam da Dhaba and Hardeep Chadha’s and Atul Sahni’s Khane Khaas. Moti Mahal sadly shut shop in Mumbai. My dilemma is, do I have Butter Chicken with Makki di Roti or Basmati Rice? A Happy Baisakhi to them and you all…
